Sausage & Potatoes ala Kristin

A dear friend of mine blessed me with this lovely meal a couple weeks back and it was sooo yummy I just had to try it!
I didn't have her exact recipe but relatively did what she told me...results were quite comparable!!


6-10 Italian sausages. Or one pack
6-8 potatoes (red, russet, white...variety is yummy, but one kind will do)
4 TBS Italian seasonings
1 tbs fresh thyme
Salt &pepper to taste
1 yellow pepper chopped largely
1 red pepper chopped largely
1 TBS crushed garlic
3 TBS red wine vinegar
1 teaspoon sugar
1/2 red onion chopped coarsely


1) Brown sausages whole (cut up after)
2) chop up potatoes and season with olive oil , salt & Italian seasoning
3) bake for 30 min or until crispy & cooked
4) fry peppers,garlic and onions on high with a bit of seasoning...make sure to get a nice char on the peppers. Adds to the flavor!
5) mix red wine vinegar and sugar and set aside.
6)Put peppers, cut up potatoes and sausage in a 9x 13 inch dish. Pour red wine mixture over top and bake for another 15 minutes.

This has become my new favorite meal!:D

Baked Rot-EASY....or rotini

Families gotta eat?
What to do?

This meal consists of items you most likely have on hand at the end of a week right before grocery time! Even down to that little bit of cheese left over.


1 pack of rotini
1 TBS flour
Salt &pepper to taste
1/4 cup of cheese-or as much as you like
5 crackers smashed
1 TBS brown sugar
2 TBS butter
1 cup milk
1 cup water


1) Boil pasta according to directions
2) melt butter in a sauce pan and wisk in flour until its bubbly
3) slowly add milk & water and wisk till thickens
4) add seasoning as desired and grated cheese.
5) Drain pasta and pour into Corning wear. 
6) Pour sauce over pasta and sprinkle crushed crackers and brown sugar
7) broil for 5 minutes or until brown and bubbly. Enjoy!

Easy Crispy BBQ Chicken

Looking for a quick way to make chicken?
Try out this recipe... Takes about 20 minutes and is just simple as ever!


2 chicken breasts halved
1 cup of flour
1 tea spoon salt
1 tea garlic salt
1 tea crushed garlic
1 pinch paprika
1 cup of bullseye BBQ sauce for best results

Season chicken with crushed garlic and salt

Mix other seasonings together and coat the chicken

Brown chicken in about 4 Tbs of olive oil. About 7 minutes each side.

Once chicken is cooked and juices run clear pour in 1 cup of BBQ sauce.

Immediately serve over a nice salad, with rice of whatever your family likes!

Lady Vee's Guacamole!!

16 Weeks pregnant
I am a sucker for anything involving avocado's.  Each week throughout my pregnancy the size of my baby will be represented by a fruit or vegetable.  SO a friend gave me an idea to feature a recipe with the photo's!

This week to use up this avocado I give you my home made guacamole recipe!


1  chopped avocado
1 clove crushed garlic
1 green onion chopped
2 tbs cilantro chopped finely
1/2 cup of grated cheese
1 teaspoon chopped jalepeno
1 half tomato chopped
salt & pepper to taste
 a squeeze of lime


Mix it all together  and enjoy with some home made tortilla chips!

Simple Butternut SquashSoup

I created this yum yum soup recipe I hope you all enjoy!!


1 butternut squash chopped
2 leeks chopped
half an onion chopped
3 carrots chopped
1 sweet potato chopped
1 pinch of cayenne pepper
1 teaspoon of curry powder
1 pinch of cinnamon
1 can of cream of chicken soup


1) Boil veggies in salted water.  Only put enough water to just barely cover the veg.
2) once cooked add in spices and cream of chicken soup
3) Blend with hand held blender and serve with crackers and bacon bits

I make this soup weekly, it's just so delish and easy!  Also at my grocery store there is a butternut squash mix that actually has all these items literally i just dump ingredients in a  pot and lovely!!
