Zucchini & Eggplant Spead/Dip

Another "Flexitarian Recipe"

Ingredients

1 Eggplant chopped
3 zucchini's
 chopped
1 onion minced finely
6 cloves of crushed garlic
1 tbs red whine vinegar
2 tbs parmesan
salt, pepper, and whatever spices you like, I used cumin.
3 tbs olive oil

Directions

1) Mix all in one pot and cook until everything starts to look a bit sauces, and tender
2) Blend for 2 minutes in blender
3) Serve with pita bread, chips, veg, whatever!  Even tastes nice as a pasta sauce :)


Made a super yummy lunch!

A dish from one PW to another!

I don't know why lately, in the midst of all this stifling heat, I have been craving comfort food.  Could be because I got the AC cranked up, so a good hot dish seams appropriate.  This dish recipe was given to me by one of my PW friends.  Being the rebel that I am, I  altered just a few things!  This is an easy, simple and delish meal!  Thanks Deb for sharing!

Black Bean Mushroom Chicken- From the Kitchen of PW Deb

Ingredients

5 chicken breast (I butterflied them and stuffed them with a bit on onion and garlic)
4 cloves crushed garlic
1/2 onion minced
1 can green enchilada sauce
2 cans mushroom soup
1 chicken bullion cube
salt, pepper, chili flakes, cumin, whatever you want to season the chicken
1/2 can black beans
2 cups cooked rice


Directions

1) Stuff butterflied chicken with seasoning, onion and garlic place in baking dish, top with seasonings. Broil till brown-about 15 minutes
2) Reduce heat to 375, mix enchilada sauce and mushroom soup with chicken bullion-pour over mixture
3) Spoon on top black beans-bake for 40 minutes
4) After about  35 minutes, remove chicken from baking dish, add rice and bake for remaining ten mintes.  Add chicken to top and bake for another 10 minutes-top with cheese if you really want to make this dish rich!

Oh my goodness, it is soo delicious, simple and yum yum yum!

Green Bean Casserole Baby!

Made this yummy dish for dinner...check it out!

Ingredients

4 cups of green beans( you can use frozen, but i used fresh)
4 mushrooms chopped
1 onion sliced and carmelized or french fried onions
2 tbs butter
1 1/4 cup of milk (or cream if you could care less about calories)
1 tsp oregano
1/4 tsp black pepper
1tsp salt
1tbs dijon mustard
1 clove crushed garlic
2 tbs flour
1 tbs fresh parsley


Directions

1) Place green beans and mushrooms in baking dish (a pirates baking dish works well)
2) In a sauce pan, heat margarine, add milk and whisk in flour.  Once that thickens, add spices and mustard,parsley
3) Pour sauce over vegetables. Top with caramelized onions
4) Bake for 18-20 min on 375 degrees celsius
5) Enjoy and eat some for me :)

This dish tastes great with grilled chicken.  It's quite filling, so really the casserole and the meat are quite satisfying!

Stuffed Butternut Squash

Recently I was blessed with a "Flexitarian" cook book.  It has amazing vegab recipes, that can be subbed with non-vegan "normal" foods, if your not in the mood.  This week I made, BBQ tofu pizza, black bean burgers, Lemon, Cumin Potato Salad...and this


 Stuffed Butternut Squash

Ingredients

2 apples diced
1 butter nut squash
2 tbs melted margarine
1 teaspoon cinamon
1/4 teaspoon nutmeg
1/4 cup maple syrup or brown sugar
1/2 cup pecans
1/2 cup dried cranberries
1/2 cup apple juice

Directions

1) Cut squash in half, scoop out the inside.  Fill baking sheet with apple juice.
2) Place squash in baking sheet skin down, brush top with olive oil, bake for 45 min at 350 (F)
3) Mix all other ingredients together, once squash is done, stuff and put back in the oven for another 25 minutes
4)ENJOY

I still cook!

Oh my gosh I can't believe I haven't posted anything in such a long time!

I am still cooking I assure you! LOL

My latest creation was Falafel!

It turned out so gosh darn yummy! But I didn't make a recipe! LOL
I winged it!  So next time I make it, I will post the recipe! :)


Some new things I have been eating are

SauerKraut-soo good for you by the way-and practically calorie free

Quinoa-pronounce (keen-wa)-loving it, eat it in placement of rice

Falafel-this has to be my favourite

Avacado-excellent fat source
