1 cup flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tbs melted butter


  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
  4. Top with your favorite toppings. Mine include, strawberries, french vanilla ice cream and chocolate sauce

Cheesy Chicken Casserole

So a couple days ago, I had a ladies cooking class at my home and we made this! Oh my word, it is the  yummiest meal ever!  Enjoy!


  • to 4 cooked chicken breasts, chopped $(buy the pre cooked chicken chunk package)
  • 16-oz. pkg. wide egg noodles, cooked
  • 24-oz. container sour cream
  • (10 3/4-oz.) cans cream of chicken soup 
  • 8-oz. pkg. shredded Cheddar cheese
  • 8-oz. pkg. shredded mozzarella cheese
  • 2 cups crushed ritz cheddar crackers
    1/4 cup margarine, melted 
  • 1/2 cup chopped cilantro
  • salt & pepper
  • 1/2 onion minced
  • 3 cloves crushed garlic


  1. 1) Sautee chicken with cilantro, onion, garlic
  2. 2)Mix soup, sour cream and cheese and chicken and noodles
  3. 3) Spread in large casserole dish
  4. 4) Mix crushed crackers and melted butter, sprinkle over dish and sprinkle with a little left over cilantro
  5. 5) Bake on 375 for about 30 min
