This Weeks Menu

I remember as an ambitious new bride, I made meal plans for our family.  
As the years passed i forfeited this habit.  Be it that I am beginning my Anit Laziness Challenge/Bootcamp , I thought it would be fitting to make a menu for this week!  So it will look a little something like this...

Am: Cereal
Lunch: Egg salad
Pm: Chicken & Oyster Sauce (will post recipe :))

Am: Banana Peanutbutter Smoothie
Lunch: Tomato Soup
Pm: Spicy fahitas

Am: Scrambled eggs & cucumbers
Lunch: Very Berry Yogurt Smoothie
Pm: BBQ Burgers

Am: Cereal
Lunch: Peanut butter Sandwhich
Pm: Stewed Cabbage & Rice (yumm...have to try it-will post recipe)

Am: Fruit
Lunch: Greek Wrap
Pm: Left overs :)

Sat  & Sun-No cooking, we will be out at the Rally & visiting with friends  :)

Easy Spaghetti

 2 cloves garlic
 1/2 Onion
Ground beef
 1 tbs green onion
1 green chile (fresh from my garden :))
2 tbs fresh basil
1 cube chicken bullion
salt & pepper
2 tbs bbq sauce
1 can tomato sauce (plain)

Step 1: Brown onion, garlic & meat

Step 2:  Simmer and add seasonings (chile, salt pepper, basil)

Step 3: Add tomato Sauce, bbq sauce and chicken bullion cube top with more fresh basil

Step 4-eat!  Serve Over Spaghetti Noodles! And enjoy!

Launching Cookin' With Lady Vee

Well here I am!  Again with something new!  As you will see I love new fresh things, and cooking is never an exception!  Food and cooking are such huge parts of my life. I have never been known to be a recipe Hog.  I think recipes are meant to be enjoyed by all! I have never understood why people keep there recipes a secret?  Bit selfish no?  Anyhow, sorry if  stepped on anyones toes with that one...but enjoy this recipe!! :)

Sweet Jerk Pork Chops


6 pork chops (washed in lime juice and vinegar)
2 tbs jerk seasoning
1 medium onion diced
4 gloves of grated garlic
1/2 tomato chopped
2 sprigs of thyme
1 pack shake and bake pork chop glaze
1/4 scotch bonnet pepper
2 tb honey
5 tbs soya sauce
4 tbs bbq sauce
2 tbs ketchup


1)clean the meat, then season with onion garlic, jerk sauce, soya, thyme, pepper and tomato
2) set aside 4-6 hours to marinate
3)pour shake and bake glaze in plastic bag and coat meat
4) broil or bbq  7-10 min on each side
5)once browned transfer to baking dish and add tomato, a little ketchup and butter, add honey, bbq sauce brushed over meat
6)cover in baking dish and cook on low about 250 until tender

This recipe tastes great with a nice summer salad or classic rice & peas!
